Recipe: Veggie Lentil Mushroom Soup

Vegetarian Lentil  Mushroom Soup

I was scouting Pinterest for a great version of a vegetarian lentil soup recipe and I stumbled upon this recipe from ‘My Mommy Sytle’. It’s not a vegetarian recipe but it has a lot of delicious ingredients that I wanted to have in my soup. So, I decided to change some of the ingredients and make it my own.  I also added mushrooms because this girl loves mushrooms.

It’s honestly SOOO delicious and super easy to make.  Plus, this recipe makes enough leftovers to have it for a couple of meals throughout the week.

What you need:

1/4 cup of Olive Oil
1 chopped onion
2 chopped Celery Stalks
1 1/2 cups Chopped carrots
2 cups sliced Mushrooms
3 cups Simple Truth Vegetable Stock
1 cup One Degree Organic Lentils
2 cups sliced Mushrooms
1 tsp Basil
1 tsp Oregano
1 cup Spinach
Salt & Pepper to taste

Instructions

  1. In a large stock pot, heat your olive oil over medium heat. Add in your onions, carrots, mushrooms and celery. Sautée ingredients until onion is tender (about 4-5 minutes). Stir in oregano and basil; cook for 1 more minute.
  2. Add lentils and vegetable broth. Bring to a boil. Reduce heat, and simmer for 1 hour.
  3. Add in spinach.  Bring to a boil.  Simmer for 15-20 minutes.
  4. ENJOY!
