Paleo Lemon Bars:The Guilt-Free Summer Dessert

My boyfriend brought home about 25 lemons from work last week so I had to find a way to use them! I made a batch of these on Saturday and they were gone by Sunday so I made another batch today! They are not too sweet and not too indulgent, but they taste SUPER indulgent! ENJOY!




  • 1/4 cup honey
  • 1/2 cup coconut oil (soft like butter, not liquid)
  • pinch of salt
  • 1 cup coconut flour

Lemon filling:

  • 3 eggs
  • 1/2 cup honey
  • 1 large lemon zested
  • 3 lemons juiced
  • 2 tsps coconut flour


  • preheat oven to 350 degrees F and grease 8×8 pan with coconut oil
  • using electric mixer combine crust ingredients adding flower last, slowly


  • press the dough evenly into pan and bake crust for 8-10 min or until golden brown


  • reduce oven heat to 325 and let crust cool for 30 min
  • when crust is cool whisk together eggs, honey and lemon zest DO NOT over beat.


  • juice lemons, add 2 tsps of flour to lemon juice and add to wet mixture


  • pour filling mixture over crust and bake for 20-25 min or until just set
  • cover and refrigerate for at least 6 hours (overnight is best!)
