Recipe: Deliciously Healthy Granola

My boyfriend can’t  stop making homemade coconut yogurt, so I decided to make some homemade granola to go with it! The great thing about granola is you can put whatever you’d like in it. If you don’t like one of the nuts or berries I added, choose your own! Buy organic and buy in bulk!


Makes about 6 cups. 1 hour and 15 min cook time 


  • 3 cups rolled oats
  • 1 cup slivered almonds
  • 1 cup cashews
  • 1/2 cup sunflower seeds
  • 1 cup shredded coconut (I use unsweetened but if you like things sweeter, by all means use sweetened!)
  • 2 tablespoons brown sugar
  • 1/8 cup maple syrup
  • 1/8 cup honey
  • 1/4 cup coconut oil
  • 3/4 teaspoon salt
  • 1 tsp vanilla
  • 1 cup craisins (sweetened with apple juice)
  • 1/2 cup goji berries


  • Preheat oven to 250 degrees F
  • In a large bowl combine oats, nuts, seeds, coconut and brown sugar



  • In a small bowl combine maple syrup, oil, vanilla and salt


  • combine both mixtures and pour onto 2 sheet pans greased with coconut oil


  • spray or drizzle coconut oil on top
  • cook for 1 hour and 15 min. Stirring every 15 min for even color
  • remove from oven and transfer to large bowl


  • add craisins and goji berries until evenly distributed


  • ENJOY with homemade coconut yogurt 🙂
