RECIPE: Lo-Cal Valentine Cupcakes

Not only are these cupcakes only 100 calories each (which is great for a cupcake), they are also low in sugar; containing only 19g in each one. They are extremely easy to make and absolutely delicious!

Low Calorie Valentine Cupcakes

Calories: 100
Makes 12 cupcakes
Prep Time: 10 Minutes
Bake Time:19 Minutes


What you need:

Box of Gluten Free Funfetti Cake Mix
12 oz can of coconut La Croix Sparkling Water
Small container of SF Cool Whip
Small SF Cheesecake Pudding
1 Cup of Almond Milk
Red food coloring
Valentine’s Day toppings & cupcake skirts


Directions:

Prep your icing first so that it has time to thicken in the freezer.

Icing

Mix a small package of SF cheesecake pudding with a cup of almond milk and whisk until mixed. Added in the small container of SF Cool Whip. In hindsight, I would add less Cool Whip so that the icing thickens a little better. Once all of this is combined, add in food coloring until you have reached the pink color you want. Put everything in a ziplock bag and place in your freezer.

Preheat your oven to 350 degrees. Place contents of the GF Funfetti cake mix into a bowl with a can of coconut La Croix. Mix well. Empty the mix into your cupcake pan and bake on 350 for 19 minutes. Check your cupcakes with a toothpick until they are baked all the way through. The cake will no longer stick to your toothpick when it is fully baked.

After the cupcakes have cooled add frosting and decorate with Valentine’s Day candy.
