On Tuesday I turned 26! After the holidays and all the travel I’m always terrible at planning something for my birthday. I ended up doing a series of small celebrations ending with a birthday brunch!
We were planning on going out for brunch, but I do that so often with my friends, we decided to make brunch at home. It was a major success! We made waffles with bacon and tons of different berries and chocolate for a custom waffle bar. We also made personalized mimosas with different juices, pomegranate seeds and even orange sherbet! This is a great way to make brunch a creative, exciting experience!
These waffles were absolutely amazing, super light and fluffy. We used the joy of cooking recipe. We doubled the recipe and used coconut oil spray to grease the waffle iron.
1 3/4 cups all-purpose flour
1 tbsp baking powder
1 tbsp sugar
1/2 tsp salt
1/4 to 1 cup butter, melted
1 1/2 cups milk
Mix all dry ingredients. Mix all wet ingredients. Pour wet ingredients into dry ingredients. Be careful not to overmix here or you will have a stringly batter from developing the flour. Cook on waffle iron. A deep pocket iron is preferable for a perfect balance of crispy, yet light.
It was definitely one of my best birthdays yet. I had such a great time celebrating with my amazing friends! We will definitely start hosting brunch more often 🙂
