Recipe: Delicious, Paleo Apple Crisp!

I love baking and fall is my favorite time to bake. This past week I was back on the east coast for a wedding. Much to our surprise the apples we used to make the cider in August were even more beautiful and abundant (even though it was so cold it snowed while we were back)! Feeling inspired because you just don’t see apple trees like this in California, we decided to pick them and use them.

I love baking, but I also love being healthy… So we decided to make this crisp as healthy as possible and it turned out the most delicious crisp I’ve tasted! Try it at home! Make sure you use the best organic apples, even if you can’t pick them straight off the tree 🙂

Ingredients: 

 

Topping:

  • 2/3 cup almond flour or meal
  • 1/3 cup pecans, chopped
  • 5 tablespoons palm or coconut sugar
  • 1/4 cup coconut flour
  • 3 tablespoons coconut oil (melted and cooled)
  • 1 teaspoon cinnamon
  • 1 pinch of salt

Filling:

  • 4 pounds sweet apples, peeled, cored and halved
  • 1 cup apple cider. We used cranberry juice for a tart twist!
  • 2 tablespoons palm or coconut sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons fresh squeezed lemon juice

Preparation:

  1. Combine topping ingredients
  2. Preheat oven to 400 degrees F.
  3. Cut half the apples into 1 inch chunks and the remaining apples into thin wedges.
  4. Bring apple chunks, palm sugar, and cinnamon to a simmer. Cover and let cook, stirring occasionally for 15 min.
  5. Transfer mixture to bowl and mash with potato masher. Measure 1 tablespoon of mashed apple mixture and reserve for topping.
  6. Return remaining mashed apple mixture to skillet and add sliced apples. Cover and cook over medium heat until slices begin to soften (5 min). Remove from heat and stir in lemon juice.

7. Add reserved tablespoon of mashed apple mixture to topping. Stir until topping becomes crumbly.

8. Scrape filling into 8 by 8 inch baking pan greased in coconut oil.


9. Sprinkle topping over filling.

10. Bake until filling is bubbling and topping is golden brown (about 25 min).

11. Cool for about 15 min before serving warm!
