Tomorrow is Taco Tuesday, our favorite day of the week. That means its a perfect time to share our favorite recipe for a healthy twist on everyone’s favorite Mexican inspired dish, 7 layer dip.
- 3 Organic tomatoes
- 4 Organic Avocadoes
- 2 Organic Lemons
- 1 Package of Taco Seasoning
- A bunch of green onions (optional)
- 9 oz. of black beans
- 1 package of thinly shredded sharp cheddar cheese
- 1.5 cups of greek non flavored yogurt
- 1 large can of sliced black olives
- 1/2 tsp of salt
- 1/4 tsp of pepper
Drain your can of black beans and rinse them. Fill the bottom of your pan with beans.
Mash the avocados, salt, pepper and lemon juice in a separate bowl. Once the avocados have the consistency of guacamole, add layer to pan.
Mix yogurt and seasoning packet together well. Then add layer to pan.
Chop up tomatoes and add them to pan.
Layer the top of dish with black olives.
Add the package of cheese to the top.
