Recipe: Healthy Twist to 7 Layer Dip

Tomorrow is Taco Tuesday, our favorite day of the week.  That means its a perfect time to share our favorite recipe for a healthy twist on everyone’s favorite Mexican inspired dish,  7 layer dip.

Healthy 7 Layer Dip (Time: 15 minutes)
IMG_5148What you will need:

  • 3 Organic tomatoes
  • 4 Organic Avocadoes
  • 2 Organic Lemons
  • 1 Package of Taco Seasoning
  • A bunch of green onions (optional)
  • 9 oz. of black beans
  • 1 package of thinly shredded sharp cheddar cheese
  • 1.5 cups of greek non flavored yogurt
  • 1 large can of sliced black olives
  • 1/2 tsp of salt
  • 1/4 tsp of pepper

Layer 1:

Drain your can of black beans and rinse them.  Fill the bottom of your pan with beans.

Layer 2:

Mash the avocados, salt, pepper and lemon juice in a separate bowl.  Once the avocados have the consistency of guacamole, add layer to pan.

Mix yogurt and seasoning packet together well.  Then add layer to pan.

Layer 4:

Chop up your green onions and add them to pan.

Layer 5:

Chop up tomatoes and add them to pan.

Layer the top of dish with black olives.

Add the package of cheese to the top.

There you have it.  A simple and healthy twist on 7 Layer dip.  We hope you enjoy it!
